Recipe for Asparagus Appetizer Spread
What You Need
1 pound trimmed fresh asparagus 1 1/2 cup sour cream 12 ounce 1 package softened cream cheese 8 ounce 1 envelope unflavored gelatin 1 cup cooked finely chopped ham 1 Tablespoon chopped chives Salt and pepper to taste Assorted crackers Assorted chips Assorted vegetables
How to Make It
Before preparation time, lay the cream cheese packages out on the counter to soften until needed.
Prepare a 1 quart round bottomed serving bowl by lightly applying cooking spray. Set aside until needed.
Using a large pot with a small amount of water, steam the asparagus until it is tender. Reserve 1/4 cup of the liquid while draining the liquid from the cooked asparagus.
Allow the vegetables to cool and then puree the asparagus until it is smooth in texture. Add 1 cup of the sour cream and the softened cream cheese. Blend well and then set aside until needed.
Using a small saucepan on a low heat setting, slowly heat the reserved liquid and the unflavored gelatin while dissolving the gelatin. Remove from heat and then stir in the asparagus mixture. Stir in the finely chopped cooked ham, chives, salt and pepper to taste.
Pour this mixture into the prepared 1 quart round bottomed serving bowl and then cover with lid or plastic food wrap. Place in the refrigerator to chill overnight or for at least 6 hours.
Remove from mold onto a serving platter. Spread the reserved sour cream evenly over asparagus appetizer spread. You can garnish this dish while sprinkling with cooked asparagus, chopped ham or even various types of grated cheeses.
