Easy Classic Chicken Salad

I have adapted this easy classic chicken salad recipe by using a supermarket rotisserie chicken. I do this to save time and eliminate extra fuss. With our busy and hectic lifestyle, a working mom or dad needs to save as much time as they can. This simple recipe is not complex and it can be made in a matter of minutes. Try this salad recipe over greens or put it on rolls for sandwiches.Easy Classic Chicken Salad Serves 63/4 cup mayonnaise 2 tablespoons juice from 1 lemon 5 cups shredded roast chicken, at room temperature 2 celery ribs, chopped fine 2 scallions, minced 2 tablespoons minced fresh parsley or tarragon leaves Salt and ground pepper1.
